Pork Loin Chops ( 2 x 350g approx )

After 30 odd years as a cook finding the suitable Butcher isn't any easy task, with ever increasing closures of Butchers across the uk
Finding a good old English family run Butchers who can produce meat that has been given free range and in my experience makes all the difference.
Example; Classic Old School Braised Pork Loin Chops backed up with creamed potatoes, mushy peas, but the star af the dish, were the Free range Pork Loin Chops, perfectly cut to a thickness of no less than an inch ( two fingers) and the flavour was as Pork should be.
I cannot praise Harvey's enough
